Made some shepherd’s pie for Boo n I’s dinner the other night since it was cold and wintery out. (This is so simple guys)!!! Hadn’t honestly made this since my kids were small, mainly cause Boo had said he didn’t really like it. Well when I made it this time around, he devoured it and kept saying “this is so good!” Don’t know if it was because of the small individual portion or because he truly enjoyed it but either way – it was pretty delicious!
My easy version of Shepherd’s Pie
1/2# browned and drained ground meat
1/2 c. green beans & corn
salt, pepper and garlic powder
2 T. flour
1/3 c. water
2 servings of instant mashed potatoes
1/4 c. shredded cheddar
In a saucepan, combine the meat, veges and spices on medium heat. Mix flour with the water and pour in pan to make a gravy. When bubbly and cooked through set aside. In the meantime, make instant spuds (I made 2 serving portion). In individual ovenproof casserole dish, spray lightly with Pam. Pour some of the meat mixture, top off with potatoes and sprinkle with cheddar. Bake for 20-30 minutes in 325.
