Hosting a crepe fest brunch
How does one plan to host a crepe fest? Simple really. Just make a list of all the wonderful fillings you would like to have and find you a great crepe recipe.
*Tip: make crepes a day or two before like I do, then you can have time to take care of other details on the day of.
While planning a breakfast menu for some guests at the B&B, one which was gluten free, I decided to make some practice GF crepes.
Scouring through my freezer ingredients, I pulled out my rice flour and started researching to see if there were any GF crepes that used rice flour that were any good. My first attempt at revising one recipe gave me some really yummy, soft crepes. If you didn’t know any better—you would think they had gluten.
My guests devoured them and praised the taste & texture! Best compliment ever, when someone devours a home cooked dish. So I had to share my GF crepe recipe!
Delicious Gluten Free Crepes
Ingredients
- 3/4 cup rice flour
- 3 eggs
- 1 1/4 cup milk
- 2 T melted butter
- Pinch salt
Instructions
- Toss all of the ingredients in a blender and blend till smooth.
- Mixture will be runny.
- *Stir repeatedly while cooking the crepes.
- Cook on a lightly greased hot griddle, swirl around and leave for about 1 minute, flip and repeat.
- Fill with whip cream, fruits, meats, or whatever you like.
Something to keep in mind when you make these; due to rice flour compilation the batter will be thin and grainy. I stirred it each time before pouring on griddle, just to combine it evenly each time.
Afterwards, just whip up some chocolate mousse and sweet cream filling.
