Asparagus Fries

Do you like asparagus?  If the answer is NO–you should still try this next recipe.  Asparagus fries, and they’re delish!!

There was a silly old time when I didn’t eat asparagus.  GOSH was I missing out!!!  Now, I just can’t seem to get enough of them and the bonus is that Boo likes ’em too!

So whether we’re grilling or preparing sides for a meal, I try to keep a good stash of asparagus on hand.

Here’s a great little side or snack you can make and I bet your kiddos are gonna love ’em!

These Asparagus fries are baked and so easy to prepare–the oven does most of the work and isn’t that a bonus?

They are crunchy, light, and yummy!

Asparagus Fries

1 # fresh asparagus

1 T. olive oil

egg

1/4 c. each of milk, flour & grated parmesan cheese

3/4 c. panko crumbs

Garlic/salt/pepper

Prep work: 

Wash, trim and pat dry the asparagus, then start by tossing the asparagus in the olive oil and setting aside.

In a small bowl, mix the egg w/milk and set aside. 

Combine the flour, panko, spices and cheese in a flat dish.

Dip asparagus in egg mixture, covering completely and then dredge them babies in the flour mixture. 

Lay ’em on a parchment paper lined baking sheet and bake in 375° for 6 min., turn and bake 5 more til golden brown.

Remove from oven and eat immediately–cause they’re super delectable!


You won’t be able to stop eating this and if you weren’t an asparagus fan before—–just wait!
