Ever tried making black bean hummus? Well, ya should!!! It’s one of my favorite snacks that’s loaded with omega and it’s plain delicious!
When life gets too crazy and I get antsy, I tend to load up on fruits and beans. Why is that? Anyhow, that’s what’s been happening around GCC–so, black bean hummus will be going to the office with me tomorrow.
It’s one of the easiest snacks one can make. You just toss everything in your food processor
blend up, and you’ve got a dish that will serve as a snack/appetizer, sandwich spread, or go crazy!
Black Bean Hummus
Ingredients
- 2 15 0z. cans Black Beans (liquid in tact)
- 1 t. each of ground cumin & salt
- 1/2 t. each of cayenne pepper & paprika
- 2 T. fresh minced garlic
- 6-8 ct. kalamata olives
- 2 T. lemon juice
Instructions
- Place all ingredients in a food processor and blend until you have a smooth mixture. Add the lemon juice and mix thoroughly. Pour into a glass or plastic container and refrigerate until ready to serve or for about 30 minutes. (I prefer mine chilled.) Before serving, sprinkle some additional paprika and sea salt on top.
- Serve with pita chips or as a sandwich spread.
I like to serve or eat mine with pita chips or use as a spread in a heated corn tortilla, sprinkled with avocado slices and bean sprouts. Oh man–I’m not sure I’ll have any to take to the office and share!
