The 3rd of our crock pot cooking series are… the bomb Baked Potatoes! And the possibilities are endless, cause as you know, you can go crazy with baked potato toppings. Also the convenience that these make not only for a home dinner but we’ve made these several times in the office and they’re always a hit! Why the bomb? Cause they’re YUM!!!
We’ve had plain potatoes with only butter and sour cream, we’ve also done shredded beef with bbq sauce, and even done chili with cheese, sour cream, and chives. There’s also enchilada baked potatoes where you can add spiced up chicken or beef and then add salsa and cheese. See what I mean by endless possibilities?
Some simple food prepping and helpful tips that will make this dish super easy!?!
Food prepping:
Nothing! Seriously- how easy can these make your meal plans? You don’t even have to poke the potatoes like you normally would for the oven!
You just want to wash, scrub, dry, and drizzle with some olive oil and your favorite spices before wrapping each one up!
So here we go…
the bomb BAKED POTATOES
Ingredients
- 4 - 6 medium russet potatoes
- olive oil
- sea salt and pepper
- 1/2 cup water
Instructions
- Scrub and rinse potatoes then dry. Place each potato on a piece of aluminum foil (large enough to cover entire potato & then some). Drizzle 1 tsp olive oil on each potato to evenly coat. Sprinkle with sea salt and pepper (if you’d like). Wrap with foil.
- Pour 1/2 cup water into a 6 or 7 quart slow cooker and place potatoes in slow cooker. Cover and cook on high heat 4 - 5 hours or low heat 7 - 9 hours, until potatoes are tender (smaller potatoes will cook faster than the larger). Serve warm with desired toppings.

What you’ll love about these baked potatoes—well, I can seriously tell you that there’s NOTHING that you’ll NOT love! But you won’t have to turn your oven on AND this works perfectly for SWEET POTATOES as well! After they cook, they will be so tender and cooked perfectly–you just wait and see!
