Hi loves! It’s been awhile. Before we talk food…specifically this delicious pineapple shrimp bowl, I want to ask you what you think about my new site?
While it’s been a tad busy at temporary casa GCC, we’ve finally had a chance to give this “home” a new facelift. It had been about 3 years and definitely time for a cleaner, friendlier look. I’m getting used to it and I hope you do too. Blogging is lots of work y’all- it’s a good thing I enjoy it tremendously! Otherwise I wouldn’t be committed to it’s longevity. We still have all the same sights, subjects, etc. but a different logo and layout. Either way, I’m happy you’re here!
I also hope you’ve been enjoying the season as much as we have. There’s been lots of outdoors time with the kids cause our temps have been in the 70-80’s during the day and 60’s at night. I. L O V E. That!!! Now, back to my post. Who doesn’t love light meals? We’ve been having lots of those. Fresh salads filled with goodness & crunch, grilling, and this simply easy & delicious pineapple shrimp bowl is no exception!
Don’t you just love easy meals? Let me just tell you what’s in this to uncomplicate things. You can do this!
We have spicy shrimp with pineapple tidbits, roasted corn, diced tomatoes, sliced avocado, walnuts and lime brown rice. Then you can top with a bit of peppercorn ranch dressing! Yum! Right? Best part—put whatever the heck you want in it!
I’m not going to list a full recipe, merely the steps cause it’s that easy. And you can add more or less ingredients.
Delicious Pineapple Shrimp Bowl
- brown rice with lime juice
- shrimp
- pineapple tidbits
- frozen or fresh corn
- tomato
- avocado
- walnuts
- dressing
Start by cooking up some brown rice and flavor with fresh lime juice & parsley. Set aside. Cook shrimp and flavor with your favorite spices.
(I used Tony Chachere’s creole seasoning.)
Right before it was completely browned and fully cooked, I added the pineapple tidbits in to the shrimp pan and simmered about 4 minutes.
For the roasted corn, spread corn on a baking sheet and cover with a bit of olive oil, salt & pepper. Bake for 5-6 minutes in 500º. Allow to cool once you remove from oven and set aside while you’re done prepping the remaining ingredients.
That’s it. Now just load away and enjoy! I bought this peppercorn ranch dressing that’s amazing and it added the perfect touch. I hope you enjoy this simple but totally wonderful entree bowl!
