Hi all! How about a refreshing summer dessert (key lime cheesecake) to be exact?
I can always find time for dessert especially when we’re having company. But summer is a time when I don’t want to have the oven on for any amount of time, so I try to stick to easy and delicious desserts like this favorite of mine.
What’s so fantastic about this dessert? Like I said, no oven for one. Then you have a creamy but tangy center on a buttery graham crust and the topped with blueberry filling…YUM-O! Can’t go wrong with this combination.
Boo and I have been busy with projects around the B&B and had a sweet friend of our kids loan us a baby bulldozer for some major landscaping projects and we thought it would be nice to repay him by having him and his family, along with our SIL since he managed the bulldozer, over for a home cooked meal. Our first in the new abode. A full house is the best, isn’t it? There was eleven of us ready to dive in to grilled steaks, roasted veggies, corn on the cob, Waldorf & pea salads and then creamy, sweet dessert.
I chose this dessert also because it is super easy to prepare and I love that kind of dish! I also had plenty of key limes on hand. What is a summer without key lime something?
The other thing I like about this dessert is if you have a gluten free eater on your hands, you can swap cheerios for the grahams in the crust.
Refreshing Summer Dessert (key lime cheesecake)
Ingredients
- Filling
- 2 c heavy whipping cream
- 2 boxes softened cream cheese
- 1/2 c. granulated sugar
- 2 T. fresh squeezed key lime juice
- 1-2 t. lime zest
- Crust
- 1 1/2 c. graham cracker crumbs
- 2 T. sugar
- 1/3 c. melted butter
Instructions
- Filling:
- Place the whip cream, cream cheese and sugar in a mixing bowl and blend until creamy and thick. Gently fold in the lime juice and zest.
- Set in fridge while you prepare the crust.
- Crust:
- Blend all of the ingredients together until they are well combined.
- Hard press into a 9 x13 pan and then spread the filling.
- Refrigerate for 2 hours or longer.
- To serve, cut into squares and top each with blueberry filling and a slice of fresh lime.

This is my favorite cheesecake filling because it is so light tasting and you don’t have to bake it. It tastes fantastic and hits the spot, each and every time! I typically serve them in mini mason jars and they look so fabulous. Everyone always thinks I slaved on making these. You can also skip the zest and lime juice, substitute vanilla and top with raspberries, strawberries or blackberries. It’s always delicious!
I’m telling you, you have no excuse for not bringing a dessert to the next pot luck dinner, church gathering, or Sunday family dinner!
