This is probably the simplest recipe, appetizer, snack, you will probably ever make but it will know your socks off. The the most amazing hummus, anyone?
Because when we recently hosted a backyard/house concert and we had lots of dear friends come share the evening with us and we also had lots of great food. However, one dish in particular got rave reviews and it was a hit. The great AWESOME Black Bean Hummus is so simple to make but it’s AMAZING!
Who doesn’t love black beans? (Actually I know lots of people who don’t), however, I happen to love black beans and so do my kids. Heck! We all love hummus just as much!!! Both kids were home- so…I pulled out a recipe I had for this deliciousness of a hummus and assigned my daughter to make it for us.
BLACK BEAN HUMMUS
- 1 can (15 oz) black beans (rinsed n drained)
- 2 T. lemon juice
- 2 T. olive oil
- 1 T. white wine vinegar
- 1/2 t. of each (cumin, salt & onion powder)
- 1/4 t. chili powder (yep)!
- 1 1/2 t. minced garlic (I use the fresh jarred kind)
Combine all of the ingredients in a blender, (we used my Cuisinart food processor), until smooth and then spoon in a shallow serving dish. Make little grooves with back side of spoon. Allow to sit for about 10 minutes and then drizzle olive oil in the grooves. (Keeps it moist and helps from drying out or getting chalky).
We served ours with pita chips! YUM!!! I’m telling you- there won’t be any leftovers!
