Want an easy meal idea?  How about an awesome waffle for dinner?  Waffles, not just for breakfast!

Hubs and I couldn’t be more different (in a lot of ways), but it works.  He likes his breakfast!  Up until the last two years, I didn’t eat breakfast.  I like sleeping in, he doesn’t.  He loves bacon, I hate it!  But we both agree on waffles.
They don’t have to be just for breakfast.  As a matter of fact, that was our dinner the other night.  You know those days you really don’t want a three course meal or you’re wanting something entirely different from the usual?
Here’s my suggestion for such a dilemma!
You’re gonna love these, especially if you top ’em off with my previous recipe post for coconut syrup.
(I never use maple syrups now, this one is my go-to syrup)!
Go gather your ingredients (cause you should have everything you need in your kitchen) and waffle away~

Belle-gian Waffles

  • 1 3/4 c flour
  • 1 T baking powder
  • 1 T sugar
  • 1/2 t salt
  • 3 eggs
  • 1/4 c butter, melted
  • 1 1/2 c buttermilk (you can also use regular milk)

Be sure to preheat your waffle iron first.   In a large bowl combine flour, baking powder , sugar and salt. In another bowl beat the eggs, then stir in the butter and milk thoroughly. Make a well in the center of the dry ingredients and pour in the wet ingredients.  Mix together with a whisk. Mixture will be almost a foamy consistency.  Pour the batter into waffle iron, close lid and wait until indicator is ready. Serve warm.

* I especially like mine with my previous recipe for warm coconut syrup.  Then topped with blueberries or bananas and sprinkled with pecans for a tropicalish (yes, I made that up), waffle!  The hubs of course eats his with bacon 😉

These are light, crispy and tender on the inside and are perfect for a summer breakfast, lunch or dinner meal!
Makes 10 large waffles. (Remaining waffles can be cooled, sealed in a plastic freezer bag and frozen!) They taste just as good the second time around.
YUMS folks!  These are so simple that you can’t possibly make excuses for NOT making them.  Seriously!

    We have breakfast for dinner every once in a while. Lately we’ve been doing pancakes but we’ve never done waffles. I guess I’d need a waffle iron first, LOL.

    ooh Angie! You must get you a waffle maker, your boys would love having ’em! Let me know what you think when you try the recipe. For a twist, just make the syrup for your pancakes for now. Hugs~
