You have exactly ten days to get your Valentine’s Day plans together. That’s if you do anything. Do you? Special dinner, dinner out? The GCC tradition has always been a quiet night at home. Dinner is home cooked and usually consists of shrimp or steak. We have a homemade dessert and we pick out a favorite film to watch together. GIFTS, no gifts? A small gift for Boo that is most likely a dvd he doesn’t already own and some sweets or socks or something along that line. He usually gets me white roses (my fave) or something equally great. Our plans and gifts aren’t extravagant, cause that’s not our deal. We’re simplistic peeps. That is until you get to dessert! Let’s get back to that! What to make for chocolate Valentine’s Day dessert, is always the first thing I think of. My Boo l♥ves chocolate and he l♥ves dessert!

What speaks better than chocolate and strawberries to say I L❤️VE YOU?
I went through my collection of old recipes and this is a tried and true & favorite. This cake batter recipe is the best batter for chocolate anything! Cupcakes, cakes, tortes, etc. The texture, consistency, and flavor is OMG.
Honestly, I think the combination ingredients (sour cream/baking soda/hot water), makes it super moist. What could possibly make it any better?
This flippin’ frosting that I couldn’t stop eating!!! LORDY this is the best dang frosting I’ve EVER made. Have y’all ever had the fresh strawberry slush at Sonic? Well. That’s. all. I’m saying on that. (drool)
Just make this for your honey or have them make it for YOU! Can’t go wrong either way.
Best Chocolate Cake Batter-ever
Ingredients
- 3 c. Brown sugar
- 1 c. Butter softened
- 4 eggs
- 2 t. Vanilla
- 2 2/3 c. Flour
- 3/4 c. Baking cocoa
- 1 T. Baking soda
- 1/2 t. Salt
- 1 1/3 c. Sour cream
- 1 1/3 c. Boiling water
Instructions
- In mixing bowl, cream sugar with butter.
- Add eggs, one at a time
- Beating well after each one, continue beating on high until fluffy.
- Blend in vanilla.
- Combine dry ingredients and add alternately with sour cream into the sugar/egg mixture.
- Mix on low until combined and stir in hot water until blended.
- Pour into greased pans.
- Bake @ 350 for 35 minutes.
- Cool in pan for 10 minutes then on wire rack until cooled.
- Makes 3 (9”) round cakes
Notes
1 stick butter, softened
8 T. Shortening
1/2 a brick cream cheese, softened
5 c powdered sugar
4 T. Strawberry puree
3 T. Warm milk
1 t. Almond extract Making it:
Mix butter and shortening until blended with mixer.
Add the cream cheese and mix until well combined.
On the slowest setting, mix the powdered sugar and add the strawberry puree.
On medium, add the milk and almond extract until smooth.
*You can add more milk or powdered sugar to get the right consistency.

The batter makes 3 hefty (9″) round cakes or I made these mini chocolate cakes and some cupcakes for the littles and to share with the neighbors!
