City for the Country Banana Muffins

Ingredients

  • 2 cups gluten-free all-purpose baking flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon salt
  • 4 eggs
  • 3 mashed ripe bananas
  • 1 cup sugar
  • 1/2 cup unsweetened applesauce
  • 1/3 cup canola oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans optional

Instructions

  • In a large bowl, combine the flour, baking soda, cinnamon, allspice, and salt.
  • In a small bowl, whisk the eggs, bananas, sugar, applesauce, oil and vanilla.
  • Stir into dry ingredients just until moistened.
  • Divide up the batter into cupcake pan coated with cooking spray.
  • Sprinkle with nuts.
  • Bake at 350° for 20-22 minutes or until a toothpick inserted in the center comes out clean.
  • Cool for 10 minutes before removing from pan to wire racks.
  • Yield: 16-18 muffins
