In a large bowl, mix together flour, salt, baking powder, sugar and nutmeg; set aside.
Preheat waffle iron to desired temperature.
In a separate bowl, beat the eggs.
Pour milk and vinegar in a small measuring cup and allow to sit for 5 minutes, then stir in melted butter and vanilla.
Pour milk mixture into the eggs and combine well.
Pour the milk/egg mixture into the flour mixture; beat until blended.
Ladle the batter into a preheated waffle iron.
Cook the waffles until golden and crisp.
Serve immediately.
